Description
This is a multi floral run honey from the scenic Beara Peninsula in West Cork.
The colonies are situated at the base of Hungry Hill, which are part of the Caha Mountains. This means that the bees don’t have to travel too far to get to the heather. The addition of heather honey to the mix gives the honey a slightly darker colour than one would get with pure blackberry or clover honey.
Beara is well known for its Fucshia and hedgerows which provide season long forage for the bees. I extract the honey early August so the final product has a rich colour and tang from the heather and a fruitiness from the blackberry.
The honey is extracted from the frame and filtered through a sieve and muslin cloth, but will still contain some pollen. I do not heat or interfere with the honey in anyway. As it is real honey, it will granulate in time. That is a perfectly normal phenomenon, and the speed at which this happens depends on the type of nectar that the bees have been foraging on. However this is generally not an issue as the jar is usually empty long before the honey has had a chance to granulate.
